Crock Pot and Baked Steak Chimichangas

Description

This is a healthy alternative to deep fried chimichangas and the recipe is made even easier by incorporating the slow cooker.

Ingredients

  • 1 pound Round Steak
  • 1 package Dry Taco Seasoning
  • 1 whole Medium Onion, Chopped
  • 1 whole Bell Pepper, Chopped
  • 1 can Rotel (whichever Kind Floats Your Boat)
  • ¼ cups Water
  • 2 Tablespoons Vegetable Oil Or More As Needed
  • 6 whole Large Tortillas
  • 1 can Refried Beans
  • 1 pound Cheddar Cheese, Grated
  • 1 tub Sour Cream (optional)
  • 1 jar Salsa (optional)

Preparation

Add meat, seasoning packet, onion, bell pepper, Rotel and water to the crock pot and let it cook on low for 8-10 hours or on high for 4-6 hours.

When it’s time to eat, preheat oven to 350F.

Brush the bottom of a cookie sheet with vegetable oil. Then lay out the tortillas. Spread refried beans on each tortilla. Top with cheese. Then top with the meat mixture. Roll each tortilla up like a burrito.

Brush the tops of the burritos/chimichangas with vegetable oil.

Bake at 350 degrees for about 15-20 minutes or until the tops are golden brown.

Serve with additional shredded cheese, salsa, and sour cream.

Awesome recipe!! I made this the other night and it was amazingly quick and SO good!! My whole family loved it…even the pickiest of them!

I was looking for something easy to do with round steak that wasn’t extra tenderized and this fit the bill perfectly. My tortillas weren’t large enough to fold into chimichanga shape, so I rolled them like enchiladas and set them seam-down on the baking sheet and covered them with shredded cheese before I baked them. The flavor of the steak wasn’t perfect, so next time I may try a different kind of rotel or add some seasoning, but overall these were great and my family loved them.
