Description

A great summer fish fry recipe!

Ingredients

  • ½ cups Evaporated Milk
  • 1 Tablespoon Salt
  • 1 dash Pepper
  • 1 cup All-purpose Flour
  • ½ cups Yellow Corn Meal
  • 2 teaspoons Paprika
  • 4 whole Catfish Fillets
  • ½ cups Canola Oil

Preparation

In a small mixing bowl combine milk, salt and pepper. In another mixing bowl combine flour, cornmeal and paprika. Dip the fish fillet in the milk and then coat with the flour. Cover the bottom of a skillet in canola oil and heat over medium-high heat. When the oil is heated, add the fillets and brown on each side until flaky, approximately four minutes per side. Serve immediately.

Sounds good and easy to make gluten free for my grandson, thanks for sharing.

Made this the other night, excellent, did not have catfish, had some flounder, mixed up the coating, using a gluten free flour mix, grandson has celiac disease. Came out fantastic, not a piece leftover. Crispy, and very tasty, will use this recipe again and again.
