Description

My first time totally making up a recipe turned out wonderful! Use which ever veggies you think best. This is what I had on hand.

Ingredients

  • 1 whole Lemon, Zest And Juice
  • 3 cloves Garlic, Minced
  • 1 Tablespoon Clubhouse Vegetable Seasoning
  • ¼ cups Olive Oil
  • 1 pound Raw Shrimp, Peeled And Deveined
  • ¾ boxes Linguine (375g)
  • 1 Tablespoon Olive Oil
  • 1 whole Medium Onion, Diced
  • 1 whole Red Pepper, Diced
  • 1 Tablespoon Roasted Garlic
  • 1 cup Mushrooms, Sliced
  • ¼ cups Butter
  • 4 Tablespoons All-purpose Flour
  • 1-½ cup Chicken Stock
  • ¾ cups Half-and-half Or Cream
  • ½ cups Grated Parmesan
  • 1 bunch Fresh Parsley, Chopped
  • Salt And Pepper, to taste

Preparation

1. In a ziploc bag, combine lemon zest, lemon juice, 3 cloves garlic, vegetable seasoning, 1/4 cup olive oil and shrimp. Let it chill out in the refrigerator and marinate for a couple hours. After it is done marinating, spray some oil on your grill and heat it up. Now pop those shrimp on some skewers and stick them on the grill! Watch them carefully those shrimp will cook fast and there’s nothing worse than overcooked shrimp! They are done when they start to turn pink.

2. In a large pot, get some salted water boiling for your linguine noodles! Cook them according to package instructions. Once the noodles are cooked, drain and set aside.

3. In a heavy bottomed pot, saute onions in oil until softened. Add red pepper, roasted garlic and mushrooms and saute til they look yummy. Next add in the butter. After the butter melts, sprinkle in the flour. Let that cook a minute. Slowly add the chicken stock and stir it up. Once that is all stirred up, add the cream and the Parmesan. Let that cook for a minute or two until it starts to thicken and then add the parsley. This would be the time to taste and add salt and pepper to the sauce if needed. Now you can either add the shrimp right into the sauce or you can combine the sauce and pasta together and then stick those yummy shrimp right on top! Enjoy!
