Description

I can’t even tell you how tasty this is! It is so super easy, too! A perfect weeknight meal.

Ingredients

  • 2 teaspoons Oil
  • 4 whole Skinless, Boneless Chicken Breasts
  • ⅔ cups Low Sodium Chicken Broth
  • ½ cups Cream Cheese Spread
  • 4 Tablespoons Pesto

Preparation

Heat oil in a large nonstick skillet on medium heat. Add the chicken and cook 6–8 minutes on each side until chicken is cooked through. Remove to a plate and keep warm.

Add the broth to the skillet and cook until warmed, 3–5 minutes. Add the cream cheese spread and the pesto. Cook and stir until cheese is melted and sauce is smooth. It will thicken a bit.

Add the chicken back to the pan to coat. Yep, it is just that easy! This sauce would be awesome on some gnocchi!

You could make your own pesto if you wanted but I used Classico jarred stuff it was awesome! Serve with roasted potatoes and a veggie or salad for a complete meal.

What do you mean by cream cheese spread? What did you use? I may make this tonight but want to make sure I get the right consistency with the sauce. Thanks

My husband and I were in quite a time crunch, but this recipe definitely fit the bill for quick AND super tasty. Really easy, but with great flavor! Will make this again for sure!!!

Yes, very yummy and sooo easy. I didn’t have time to roast potatoes, but the sauce was delish over fettucine. This could definitely be a weeknight keeper. Thanks for sharing!

Quick and fabulous! Made my first batch of fresh pesto this year and used it in this recipe. The family loved it! My only regret was that I didn’t make the roasted potatoes to go with it…we had extra sauce and it would have been delish on the potatoes!
