Description

Be warned: This stuff is addictive. Comfort food at its best!

Ingredients

  • 1 box Chicken-flavor Rice-A-Roni (6 Ounce Box)
  • 1 can (10 Oz. Size) Cream Of Mushroom Soup
  • 1 container Sour Cream, Low-fat (8 Ounce Size)
  • 1 whole Rotisserie Chicken
  • 1 container (6 Oz. Size) Durkee French-fried Onions

Preparation

Preheat oven to 350 F. Prepare Rice-A-Roni according to package directions. While that is cooking, shred/cut up the chicken (I always use a rotisserie chicken, but you could use leftover chicken or some cooked and shredded breasts, whatever), removing meat from bones.

When Rice-A-Roni is done, add the can of soup and the sour cream, and stir to combine. Add the chicken and mix together. Spread mixture into a sprayed baking dish (I use a 9-by-13-inch pan, but you can use what you like for how thick you want it to be) and bake, uncovered, at 350 F for 40 minutes.

Remove from oven, cover with the french-friend onions and bake for 5 more minutes. Remove from oven and try not to eat the whole thing. Yum!

Instead of using rotisserie chicken, I use a large can of chicken breast. Use two if you want more meat. I also use cream of chicken sometimes. We love it!!

Really easy and tasty. I added bag of frozen peas / carrots / green beans so I didn’t have to make a separate veggie side dish.

We loved this! I made chicken thighs in the instant pot, as opposed to using rotisserie & ours wasn’t dry at all. I also used cream of chicken soup in place of the mushroom. Everything else was the same. Any suggestions on how to warm up leftovers to avoid soggy onions on top?

I agree, we found the original recipe lacking moisture. Adjusted it by adding an extra can of soup and a soup can of milk. Also added jarred, sliced mushrooms, including the liquid and a bag of cut green beans (frozen, but thawed)…. This casserole is awesome.

This was good but it was dry. I don’t know if it was the rotisserie chicken, if it needed another can of soup, or just a dose of chicken broth. The kids loved it. I’m going to add some broth to my leftovers tomorrow and see if that helps.

This was a hit! My husband doesn’t normally like casseroles, but he loved this. I did add some black pepper and garlic powder but we loved it. He said I should add it to our rotation of dinners, which is the mark of success.
