Description

This is heavenly goodness. Creamy cheesy pasta with tomato pesto, a little basil and some shrimp! Super easy and my kids approved it! Subsitute cheeses, add spinach, add more pesto, it will be yummy.

Ingredients

  • 1 pound Shrimp
  • 1 pound Spaghetti Or Fettucine Noodles
  • 1 Tablespoon Minced Garlic
  • 2 Tablespoons Butter
  • Olive Oil, Enough To Lightly Coat The Bottom Of The Pan
  • 2 Tablespoons Sun Dried Tomato Pesto (from A Jar)
  • 6 whole Sun-Dried Tomatoes, Chopped
  • ½ cups Milk Or Heavy Cream
  • 1 cup Asiago Cheese, Shredded
  • 1 Tablespoon Basil (I Used Freeze-Dried Basil)

Preparation

I used frozen shrimp and 2 % milk (it’s what I had on hand). Thaw and peel the tails off the shrimp. Start boiling the water for your pasta. Don’t forget to add salt to the water. This is your only chance to “season” the noodles. Cook pasta according to package directions.

Sautee the garlic in butter and oil for a minute then add the shrimp, tomato pesto, and the chopped up sun-dried tomatoes. Sautee until shrimp is cooked.

Once cooked, add your milk or cream. Let it thicken for a minute then start adding your cheese. Add slowly and stir constantly. Add the basil.

Once everything has come together, add your cooked pasta and let the creamy goodness soak into the noodles. Enjoy!
