Description

Lightened up creamy Cajun pasta with a kick.

Ingredients

  • 8 ounces, weight Spaghetti Noodles
  • 1 Tablespoon Olive Oil
  • 1 pound Boneless Skinless Chicken Breasts, Cut Into Bite Size Pieces
  • 2 teaspoons Cajun Seasoning, Divided Use
  • ¼ cups Minced Onion
  • 2 cloves Garlic, Minced
  • 1 cup Diced Tomatoes
  • ⅓ cups Half-and-half
  • Grated Parmesan Cheese, Optional For Garnish

Preparation

Cook pasta according to package directions. When it’s done, drain it and set aside.

Heat a large skillet over medium high heat. Add olive oil, swirl to coat the pan. Add chicken and 1 teaspoon of the Cajun seasoning. Cook until chicken is cooked through, about 6 minutes depending on how big the pieces are. Remove chicken from the pan and set it on a plate. Cover the plate to keep the chicken warm.

Add onion and garlic to the hot pan. Saute until the onion is tender. Add tomatoes, half and half and the remaining Cajun seasoning. Bring to a slow boil, stirring frequently and cook for a couple minutes. Add chicken back to the pan. Stir in pasta, and toss to combine. Top with Parmesan cheese, if desired.
