Description

This is a stuffed chicken recipe that I made up on the fly one night with some random ingredients on hand. This has become a favorite in our house with many adaptations.

Ingredients

  • 4 pieces Bacon
  • ¼ cups Onion
  • 4 whole Boneless, Skinless Chicken Breasts
  • 4 ounces, weight Cream Cheese
  • 1 Tablespoon Salt And Pepper, to taste

Preparation

Pre-heat oven to 400 degrees F.

Start by cooking your bacon in a frying pan. Once cooked, remove from heat and let drain on paper towels.

While bacon is cooking/cooling, chop onion and prepare chicken. To prepare, use a small knife and carefully cut a pocket into the center of each chicken breast.

In a small to medium bowl, fold crumbled bacon and onion into cream cheese. Make sure everything is evenly distributed. Stuff approximately 1/4 of this mixture into each chicken breast.

Place stuffed chicken breasts on a baking sheet sprayed with oil. Season with salt and pepper to taste. Bake for approximately 25 minutes or until juices run clear.

**Alternatively, you can flatten the chicken breasts with a mallet, layer the ingredients on the chicken and roll the chicken to look like a pinwheel. Secure with a toothpick as needed. Bakes at same temperature for same amount of time.

Delish! I subbed in black pepper covered goat cheese for the cream cheese to give it a little extra kick, and brushed the chicken breasts with a little paprika/liquid baconfat mixture before sliding them into the oven.

They turned out great and it was SO simple.

I made gravy with the chicken juices at the bottom of the pan (I used a pyrex pie plate.) You can never have too much gravy, right?

Yummy! I flattened and rolled the chicken for this. I added about 1/2 cup of shredded cheddar cheese to the filling and this was soooo good. I only made 3 chicken breasts, but stuffed them extra full. I will definitely make this again and again. Thanks.

I tried this tonight doing it the flattened way instead of the pocket way and really liked it. I think next time I’ll cut the amount of cream cheese and add in more stuff to compliment the bacon and maybe up the oven temp a bit to get a better brown on the chicken. But overall, very tasty!
