Thai style fried rice.
Fry onion in oil, in a wok over medium high heat for 1 or 2 minutes. Add garlic and turn until fragrant. Add eggs to one side and spread over the surface until half-cooked, then stir to combine with onion and garlic. Add crab meat, oyster sauce, soy sauce and sugar. Stir well and cook for further 2 minutes before adding rice. Turn to combine; taste your rice and add more seasoning if needed.
Add chopped spring onion and pepper. Remove from heat. Serve with a wedge of lime or lemon and sliced tomato or cucumber. Garnish with coriander leaves.
