Description

Whole wheat tortillas with crab, pineapple, bacon, and avocado!

Ingredients

  • 2 whole Wheat Tortillas
  • ¼ cups Low-fat Mozzarella Cheese
  • 1 ounce, weight Lump Crab Meat
  • 1 slice Bacon, Fried And Crumbled
  • 2 slices Avocado, Chopped
  • 1 Tablespoon Shallots, Chopped
  • 1 slice Pineapple, Chopped

Preparation

Combine all ingredients, except for tortillas and cheese, in a bowl.

Heat a skillet on medium heat and spray with cooking spray. Assemble tortillas with the ingredients in between, as the filling. Make sure there is cheese on both the bottom of one tortilla and the top of the crabmeat mixture to act as “glue.”

Brown the tortilla on both sides until the cheese is melted.

this is AWESOME. just tried it for lunch. we didn’t have pineapple & i used imitation crab meat because we had it on hand. i’ll have to try it again soon with those!

These were great! And they inspired me . . . I think next time I try this, I might omit the bacon and put some lime juice in the interior mixture. I love bacon — don’t get me wrong — but I want to see what it would taste like without the bacon.

These were amazing! We got rave reviews at a recent family gathering. Super easy to make and I agree that you could leave the bacon out if you wanted something a little lighter, but they are good either way!
