This is one of my absolute favorite dishes! It is a little bit sweet, a little bit spicy, a little bit buttery and definitely one of those warm comfort foods!!
Preheat oven to 400F.
Pour 2 cans drained whole kernel corn in a 13×9 glass pan. Pour in 1 can sweet cream corn.
Dice 3/4 of a red pepper and 2 jalapenos. Add to the corn.
Add shredded sharp cheddar cheese, then add sour cream. Mix. You can add a couple dashes of salt, pepper, garlic, or any other spices you want.
After it is all mixed well, mush it down evenly throughout the pan.
Put the 1 1/2 packages of Ritz Crackers in a Ziploc bag and crush, or you could use your chopper. Great for handing over to the kids and letting them smash the crackers. They’ll love it! The crackers can be finely crushed or just barely broken up. Either way, it will still taste delicious!
Pour the crushed crackers over the top of your corn mixture and pat down evenly.
And finally, slice butter and put it over the crackers. Paula Dean would be proud!
Bake it at 400F for 15 to 20 minutes. You may need to cover with foil towards the end so the top doesn’t get too done.
My kids really like this recipe because they say It taste just like pizza. Besides getting rave reviews at home, this was another popular side we used to have on the TaylorMade Menu in the cafe. This is a lovely way to use stale bread or when you have fresh farmers market tomatoes. You can use any kind you like; I have made this recipe with all kinds—red, yellow and orange tomatoes, grape tomatoes, heirloom tomatoes, etc.
