Description

Conchitas means “shells” in Spanish. This is simple, delicious pasta dish!

Ingredients

  • 1 Tablespoon Vegetable Oil
  • 1 bag Skinner Medium Shells (use 1/2 Bag)
  • 4 cups Water
  • 1 can 8 Oz Hunts Tomato Sauce
  • 1 cube Chicken Flavored Bouillon (I Use Ya'sta')

Preparation

Add oil to a medium size pan, add shells and toast until golden brown stirring constantly so they don’t burn.

Add 3 cups of the water, the tomato sauce and the bouillon cube breaking it up with your fingers.

Bring to a point until liquid reduces by half. At this point you can cover and simmer for about 15 minutes for an al dente shell or add another cup of water then simmer for 15 minutes for a more tender shell. Add salt and pepper to taste.

Serve in a bowl and sprinkle with mozzarella cheese and add herbs if you like.

I made this for lunch today for me and my 7 year old. We both liked it a lot. I can definetly see this being a lunch box thermos staple in the winter time. I used macaroni because it’s all I had on hand. I added pinches of onion, garlic, cumin and chili powder as well. This is fast, easy and CHEAP and I always have the ingredients on hand. It’s definetly a winner!

In the summer you can add more water and make it as a soup and sprinke cheese on top. In winter you can add more cheese and bake it in a casserole and use as a side dish.

Its very quick, simple and delicious!
