Put chicken in a non-stick skillet. Pour the ketchup and Diet Coke over the chicken. Bring to a boil over medium heat. Cover the skillet, reduce heat to a simmer and cook for 45 minutes. Preheat oven to 200 F.
Uncover it the pan, remove the chicken and put it in an oven safe dish. Put chicken in a 200 F oven to keep warm. Turn up the heat on the sauce and continue to cook until the sauce becomes thick. Once it’s thickened your are ready—this turns into the best BBQ sauce. Pour over the warmed chicken and serve.
