Description

This coconut curry fish has lots of great flavor and can be made with things you probably already have in your pantry.

Ingredients

  • 1 whole Lime, Zest And Juice
  • 1 teaspoon Cumin
  • 1 teaspoon Ground Coriander
  • 2 Tablespoons Soy Sauce
  • 1 teaspoon Salt
  • 2 Tablespoons Brown Sugar
  • 2 teaspoons Curry Powder
  • ½ cups Light Coconut Milk
  • ¼ teaspoons Cayenne Pepper
  • 1 pound Tilapia (4 Filets)
  • Optional Toppings: Cilantro And Toasted Coconut

Preparation

In a medium sized baking dish combine the first 9 ingredients, everything through cayenne on the above list. Whisk to combine. Add the fish and cover it with the marinade. Let the fish marinate for at least 30 minutes.

Preheat oven to 400 degrees F. Cook fish in marinade for 12-15 minutes, until fish flakes easily. Serve with cilantro and toasted coconut.

My whole family loved this! So easy and so flavorful. Next time I will use low sodium soy sauce it was a bit salty but great over rice. A new house favorite! Thanks
