Description

Sweet and savory bbq-ish chicken—one of my favorite comfort foods straight from the kitchen at my grandparents’ farm! Here in the South, we drop the second syllable of America’s favorite soft drink, leaving us with Co-Cola chicken. Of course, you can use any dark soft drink you have on hand.

Ingredients

  • 1 whole Cut Up Fryer
  • 1 can (12 Oz.) Co-Cola (I Use Diet)
  • Ketchup To Taste

Preparation

Preheat oven to 400 degrees. Spray casserole/baking dish (usually I use a 13 1/2″ by 8 1/2″) with a nonstick spray. Rinse pieces of an entire cut-up fryer. Place in dish.

The next step has two variations. You can drizzle ketchup over the top of the chicken pieces and then pour the can of Co-Cola OR you can mix ketchup (usually 1 to 2 cups, depending on how thick you want the sauce to be) and Co-Cola then pour the mixture over the chicken. Both ways work well and are delicious. I prefer the first because it makes for a nice variation between parts of the chicken.

Bake for 35 to 45 minutes or until juices run clear and the meat of the thickest piece is no longer pink.

Serve over white rice; pour pan juices over top.

You can also use a lemon flavored soda like Sprite or 7-Up with one or two cups of salsa. Makes it very interesting and yummy over rice!
We have also done orange soda with Ketchup. Resembles orange chicken.
