Description

A tangy citrus salmon over a bed of fettuccini and fresh spinach. I love how easy this makes spinach consumption and how filling this meal is.

Ingredients

  • 4 cups Fresh, Raw Spinach, Divided
  • 2 cups Cooked And Salted Fettuccini Pasta
  • 2 Tablespoons Olive Oil
  • 1 piece Salmon Fillet
  • 1 Tablespoon Lemon Pepper
  • ¼ cups Citrus Juice
  • 1 Tablespoon Undrained Capers

Preparation

Spinach:

Divide the fresh spinach into plates or bowls as a thick bed for the remaining ingrediants.

Pasta:

Prepare pasta according to box instructions. I prefer leaving it on the firm side for this recipe especially. It’s important to salt the water well, so that your pasta comes out without needing additional seasoning.

Salmon:

Start by drizzling the oil into a heated skillet. Add your salmon fillets. Liberally cover the top of the salmon with the lemon pepper. Add half of the citrus juice while cooking, just to allow the fish to absorb some of the flavor. Once the salmon is cooked and caramelized with a nice sear on the outside, remove the fish from the pan and add a bit more oil, the rest of the juice, and the capers to de-glaze the pan. Heat and reduce some.

Putting it all together:

Layer the hot pasta over the bed of spinach, place the salmon on top and drizzle the remaining juice/de-glazed bits from the pan over the pasta and fish. It drips down through the pasta and the spinach and tastes amazing all together.

Excellent way to prepare salmon. Really fast. I used lime juice and no capers, and it was delicious. I wasn’t jazzed about the spinach and pasta part. It was rather dry in my opinion. I’d prefer to wilt the spinach a bit and toss it with the pasta and the sauce from the deglazed pan (in which case more sauce would be nice).

I made this last night for V-Day dinner. Hubby really liked it. I made it without capers and with a bit more OJ, but it was still delicious. I will definitely make it again. Thanks!

Fixed this last night… wonderful recipe to change up a heart healthy diet for Cute Husband and myself. I thought I had the capers but when I checked the fridge… no capers… so I diced sundried tomatoes and deglazed with less oil and more lemon juice. Cute Husband says to put this recipe in my weekly menu! Thanks!
