Description

A great, healthy dinner… Just be sure to make extras for lunch the next day.

Ingredients

  • ½ whole White Onion, Diced
  • 2 whole Cloves Garlic, Minced
  • 3 Tablespoons Chopped Fresh Cilantro
  • 1 pound Lean Ground Turkey
  • 2 teaspoons Garlic Powder
  • 1 teaspoon Ground Cumin
  • ¼ cups Tomato Sauce
  • ½ cups Chicken Broth
  • 1-½ cup Cooked Brown Rice (cooked According To Package Instructions)
  • 3 whole Large Bell Peppers, Red Preferred, Halved And Seeded
  • ½ cups Shredded Cheese, your choice
  • Salt To Taste

Preparation

Heat oven to 400 degrees F.

Spray some olive oil spray in a skillet and heat on a medium high flame.

Add onion, garlic and cilantro to the pan and saute about 2 minutes. Add ground turkey. Season with salt, garlic powder, and cumin and brown meat for several minutes until meat is completely cooked through.

Add 1/4 cup of tomato sauce and 1/2 cup of chicken broth, mix well and simmer on low for about 5 minutes.

In a large bowl, combine cooked rice and the meat mixture and stir well.

Cut the bell peppers in half lengthwise, and remove all seeds and place in a baking dish. Fill peppers with turkey/rice filling as much as you can. Cover your baking dish with a lid or with aluminum foil and bake for 35 minutes.

Once cooked, top with shredded cheese and let it melt. Enjoy!
