Description

Fresh and tasty. The dressing can also be used for a Mexican-inspired salad. Yum!

Ingredients

  • FOR THE SHRIMP:
  • ⅓ cups Rice Wine Vinegar
  • ¼ cups Fresh Lime Juice
  • 1 clove Garlic, Chopped
  • 1 teaspoon Chili In Adobo Sauce
  • 2 Tablespoons Honey
  • ½ teaspoons Salt
  • ½ cups Canola Oil
  • 1 cup Cilantro Leave/stems
  • 1 pound Raw Shrimp, Peeled And Rinsed Well
  • FOR ASSEMBLING THE TACOS:
  • Taco Shells
  • Your Favorite Taco Toppings

Preparation

For the shrimp, combine all the ingredients (except shrimp) in a blender and pulse to combine. Place shrimp in a shallow dish and pour half of the dressing over the top. Allow to marinate for at least 15 minutes. Reserve the remaining dressing to drizzle on the tacos.

Heat a little oil in a frying pan over medium heat; add shrimp (dressing and all) and saute about 5 minutes or just until shrimp is pink throughout. Shrimp cooks very quickly, so please don’t overcook, as they like to get tough and chewy!

To assemble the tacos, warm the taco shells and enjoy with your favorite toppings, like, tomatoes, onion, cilantro, pico de gallo, sour cream and cheese!
