Description

Bubbly dish of legumes!

Ingredients

  • 1 whole Onion, Diced
  • ½ pounds Bacon - Can Use 1/2 Turkey Bacon And 1/2 Pork Bacon
  • 1 pound Ground Beef
  • 16 ounces, weight Can SMALL Lima Beans (drained)
  • 16 ounces, weight Can Red Kidney Beans (drained)
  • 16 ounces, weight Can Pork And Beans (do Not Drain)
  • ¾ cups Brown Sugar
  • 1 cup Ketchup
  • 2 Tablespoons Prepared Mustard
  • 2 teaspoons Cider Vinegar
  • ½ cups Cold Water

Preparation

Preheat oven to 350 degrees F.

Brown onion in skillet and set aside. Cook bacon to your liking, I prefer crispy so it holds up well in the sauce. Remove bacon from the grease and crumble after cool to touch, then set aside.

Brown ground beef, drain. (Cooking the meats beforehand keeps from having a greasy dish of beans).

In a Dutch oven add the beans, onion, bacon, ground beef and stir to combine. In a bowl, combine the brown sugar, ketchup, mustard, cider vinegar and cold water. Mix and pour over bean mixture. Bake for 45 minutes or until bubbly.

Note: I’ve also combined everything in a crock pot for a pot luck at work. Works just as well, but the oven is the preferred method.

Sometimes I will add extra cans of beans. I’ve thrown in black beans and red beans before. Always drain these types of beans. Just make a little extra sauce if adding more than the three cans in the recipe.
