Description

This is the best, creamy, crunchy, chicken salad sandwich ever! You have to give this a try.

Ingredients

  • 2 cans (12 Oz. Size) Canned White Meat Chicken Breast, Well Drained
  • ½ cups Mayonnaise
  • 2  Green Onions, Finely Sliced
  • 1  Celery Stalk, Finely Diced
  • ¼ whole Fuji Apple, Diced (use Up To 1/3 Of The Apple If Desired)
  • 1 teaspoon Salt
  • ½ teaspoons Pepper
  • ¼ cups To 1/3 Cup Craisins Dried Cranberries, Optional
  • ¼ cups To 1/3 Cup Cashews, Chopped, Optional
  • 6  Romaine Lettuce Leaves
  • 6  Slices Swiss Cheese
  • Bread Or Rolls For Sandwiches

Preparation

Drain the cans of chicken really well and place the chicken in a medium bowl. Add the mayonnaise and mix well.

Add the onions, celery and apple and mix well. Add salt and pepper and mix to combine. Add Craisins or nuts if you are using them. Mix to combine and adjust seasoning if necessary.

Serve as a salad or toast bread and serve as a sandwich. I used those new sandwich thins to make my sandwich today and toasted it first. It was super yummy and I saved calories on the bread!

Serves 4 – 6 sandwiches or salads.

For sandwiches:
Use 2 slices of your favorite bread—toasted is best. Top one of the pieces of bread with some of the chicken salad. Add 1 slice of your favorite cheese—we like Swiss. Top with some lettuce and the top slice of bread.

For salad
Add about 1/2 – 3/4 cup chicken salad to a bowl of green salad and enjoy!

Wow, this was really good! I was looking for a quick and easy chicken salad/sandwich to put in the lunch pack rotation (since my husband was starting to get bored with plain turkey/cheese), but I wanted it full of lots of goodies, and this recipe has it! You can adapt this to whatever you have on hand, and the canned chicken (although something I rarely use) makes it so quick to make. Loved it!
