Description

I decided to make an updated grownup version of my childhood favorite, beanies and weenies. It was a hit!

Ingredients

  • 1 pound Chorizo Sausage
  • ¼ cups Onion, Diced
  • 1 can (15 1/2 Oz. Size) Great Northern Beans, Drained
  • 1 can (15 1/2 Oz. Size) Pinto Beans, Drained
  • 1 can (6 Oz. Size) Tomato Paste
  • 1 can (14 1/2 Oz. Size) Diced Tomatoes
  • 1 teaspoon Brown Sugar
  • 1 teaspoon Ground Mustard

Preparation

Combine the sausage and onions in a Dutch oven and brown over medium heat until the sausage is cooked and the onions are translucent. Mix the beans, tomato paste, diced tomatoes, brown sugar and ground mustard with the sausage/onion mixture in the Dutch oven. Stir well to combine the ingredients.

Place lid on Dutch oven and bake in a 350ºF oven for 25 minutes.
