Description

A rich and spicy sauce sends this pizza over the top. Flavorful chorizo sausage is an unexpected and tasty alternative to Italian sausage!

Ingredients

  • 6 ounces, fluid Tomato Paste
  • 5 ounces, fluid Warm Water
  • 3 Tablespoons Grated Parmesan Cheese
  • 3 cloves Garlic, Minced
  • 1 Tablespoon Honey
  • ¾ teaspoons Onion Powder
  • ½ teaspoons Dried Oregano
  • ½ teaspoons Dried Basil
  • ½ teaspoons Black Pepper
  • ⅛ teaspoons Cayenne Pepper
  • ¼ teaspoons Red Pepper Flakes
  • 1 teaspoon Salt
  • ½ pounds Chorizo
  • 1 whole Batch Of Pizza Dough (enough For One Medium-large Sized Crust)
  • 1 whole Jalapeno, Sliced
  • 8 ounces, weight Fresh Mozzarella Cheese
  • 1 Tablespoon Olive Oil

Preparation

In a small bowl, combine tomato paste, water, Parmesan, garlic, honey, onion powder, oregano, basil, pepper, cayenne, red pepper, and salt. Mix very well. Cover and keep in refrigerator at least 30 minutes before using, so that flavors can develop. Taste for seasoning, adding salt and red pepper flakes as necessary.

Preheat oven to 500 F.

In a large skillet over medium heat, cook chorizo until crumbly and completely browned. Set aside on paper towels to drain.

Roll out pizza dough to your desired size and thickness and put it on a pizza stone or cookie sheet. Spread prepared pizza sauce evenly over dough leaving a border around the edge. Then top with slices of mozzarella. Next, add jalapeno slices and chorizo. Brush edges of pizza crust with olive oil. Bake for 12-15 minutes, until crust is golden and the cheese is bubbly. Allow to sit for a couple minutes to cool slightly before cutting into slices and serving.
