Description

Chipotle pork tenderloin is an easy meal perfect for weeknights!

Ingredients

  • 1 teaspoon Chili Powder
  • 1 teaspoon Paprika
  • ½ teaspoons Cumin
  • ½ teaspoons Coriander
  • ½ teaspoons Pepper
  • ½ teaspoons Salt
  • 1 Tablespoon Olive Oil
  • 1-½ pound Pork Tenderloin

Preparation

Preheat oven to 375ºF. Prep a roasting pan and set aside.

Meanwhile, in a small bowl, combine chili powder, paprika, cumin, coriander, pepper and salt. Add olive oil and stir to combine.

Place the pork tenderloin on the roasting pan. Evenly coat the pork with the spice mixture.

Roast the pork tenderloin for 40–50 minutes, or until it reaches an internal temperature of 145ºF. Let the tenderloin rest for at least 5 minutes. Slice and serve.
