Chipotle-Corn Turkey Burgers

Ingredients

  • 2 Tablespoons Butter
  • ½ cups Fresh Or Frozen Sweet Corn
  • 2 Tablespoons Canned Green Chilies; Chopped
  • ¼ whole Yellow Onion, Diced
  • 1 pinch Salt And Pepper, to taste
  • 1 pinch Red Pepper Flakes
  • 1 pound Ground Turkey
  • 3 whole Chipotle Chili Peppers In Adobo Sauce, Finely Chopped
  • ⅓ cups Chopped Cilantro
  • 2 Tablespoons Vegetable Oil
  • 4 slices Cheese, Monterey Jack Or Cheddar
  • 4 whole Hamburger Buns, Slightly Toasted
  • 3 Tablespoons Mayonnaise
  • 4 whole Romaine Lettuce Leaves, Roughly Chopped
  • 1 whole Small Tomato, Sliced

Preparation

In a medium-sized skillet, melt the butter over medium heat. Add the corn, chilies, onion, salt and pepper, and red pepper flakes. Let that cook for approximately 7 minutes, until the corn is golden brown and the onions are translucent. Then remove from heat and set aside to cool.

In a large mixing bowl, combine the turkey, cooled corn mixture, diced chipotle chile peppers, chopped cilantro, about 1 teaspoon of salt and 1/2 teaspoon of black pepper. Form the mixture into 4 patties and refrigerate the patties for at least 20 minutes.

Preheat grill to medium. Brush the grates of the grill with the vegetable oil. Grill patties until deep golden-brown, about 5 minutes. Flip, and cook the other side for another 5 minutes.

During the last few minutes of grilling, top with cheese. If you’re grilling your hamburger buns, place them on the grill now and heat them until toasted.

Spread the mayonnaise on the toasted bun bottoms and top with lettuce, patties and tomato slices.
