Description

Easy, tasty Chinese dumplings.

Ingredients

  • FOR THE DOUGH:
  • 5-⅓ ounces, weight Flour
  • Water
  • _____
  • FOR THE FILLING:
  • 1 Tablespoon Ginger, Minced
  • 1 Tablespoon Green Onion, Chopped
  • 7 ounces, weight Minced Pork
  • 2 teaspoons Salt
  • 2 teaspoons Sugar
  • 1 teaspoon Pepper
  • 1 Tablespoon Rice Vinegar
  • 1 Tablespoon Light Soy Sauce
  • 1 Tablespoon Sesame Oil
  • ¾ ounces, weight Water

Preparation

Let’s start by making the dough. In a bowl, place the flour and make a little hole in the center and a well all around the hole. Pour enough water to fill in both spaces. (See related blog post for photos.)

Mix the flour and water together and knead the dough till it gets smooth. Roll it out in a long shape. Fold it in 3 parts. Roll it out again. Repeat this 5 times. At the last time, roll the dough in a rectangular shape and starting from the top, roll it in itself to create a long tube. Grab it and gently squeeze it in your hand to take all the air out. Divide the dough into small pieces and with roll each piece into a thin circle.

Make the filling. Chop the ginger and green onion. In a bowl, mix the meat with all the ingredients, including the 20g of water. Take one disk of dough and in the center add 1 teaspoon of filling.

Now comes the hard part: we need to close it! Starting from the right edge, slowly fold it like a fan. Repeat with the remaining filling and disks of dough.

Bring some water to a boil and boil your dumplings for about 8-10 minutes. Drain them and serve with vinegar or soy sauce.
