Description

Quick and easy casserole! Yummy with Spanish rice as a side dish!

Ingredients

  • 1 pound Ground Beef
  • 1 cup Onion, Finely Diced
  • 1 Tablespoon Minced Garlic
  • 2 cans Whole Green Chilies (4 Oz)
  • 2 cups 4 Blend Mexican Cheese, Grated
  • 4 whole Eggs
  • ¼ cups Flour
  • 1-½ cup Milk
  • ½ teaspoons Salt
  • ½ teaspoons Pepper
  • 3 dashes Hot Sauce

Preparation

Brown meat in skillet with onion and garlic. Drain off excess fat. Spray an 8×11 baking dish with non-stick cooking spray. Line the bottom of the dish with 1 can of green chilies (cut a slit in each chili to open it up and lay it in the dish flat). Top chiles with 1 1/2 cups cheese. Add browned meat on top of the cheese. Top with the other can of green chiles. Beat egg and flour until smooth. Mix in milk and seasonings. Pour over casserole.

Bake for 45 minutes at 350. Top with remaining cheese and let sit for 5 minutes.

Great recipe. Next time I plan to use more green chili or spicier ones. We like our food a little more spicy, but I do love the recipe and it was so easy to make.

Sorry, I didn’t have much luck w/this recipe. Everything seemed to spread really thin. I wondered if it may have turned out better if I had made it a smaller baking dish, which I may try and see how it turns out. This was just too thin for me.
