One of my favorite kid-friendly dinners. Bonus: only 4 ingredients! These can be made vegetarian depending on the chili and beans you choose.
In a medium saucepan, combine chili and refried beans. Heat and stir until well mixed. Turn off heat.
Scoop about 1/3 cup of bean mixure onto the center of the tortilla. Sprinkle with grated cheese. Fold tortilla into a pentagon shape.
Place each star fold side down on a pan (or panini press or grill pan) heated over medium-high heat. Cook until golden on both sides.
Feel free to serve with salsa, sour cream, etc. (I eat them plain).
Makes 8-10.
*Note: You can make these ahead of time then freeze them. To heat frozen ones, thaw in the refrigerator overnight, then bake at 375F for about 30 minutes or until heated through. Or, you can broil them for about 5 minutes.
