Description

Quick and easy chili (adapt to your family’s tastes) served over rice. An all in one meal that will feed a crowd.

Ingredients

  • 2 slices Bacon, Chopped (optional)
  • 1 package Ground Beef (1 1/2 To 2 Pounds)
  • 1 whole Large Onion, Chopped
  • 1 can (14 Oz. Size) Diced Tomatoes
  • 1 package Dry Chili Seasoning Mix, 1 Ounce Packet (I Use McCormick)
  • 1 can Tomato Sauce, 14oz
  • 1 cup Water
  • 3 cups Cooked Rice
  • Optional Garnish: Shredded Cheese

Preparation

If using bacon, fry it in a large pot over medium heat until crispy. Then add ground beef and onion. Cook over medium heat until meat is browned. Add tomatoes (use plain or seasoned), chili seasoning and tomato sauce. Add water (add more or less depending on how you like your chili). Let this simmer for at least 10 minutes.
Serve over the cooked rice with cheese sprinkled on top.

I have used flavored tomatoes, added green chiles, added cinnamon, added beans, added more chili powder, etc. Make this your own by adding and omitting. The basic recipe is meat, chili mix and water – I’ve tweaked it into what works for our family. It feeds a crowd (or a few teenage boys) very inexpensively.

Side note: I grew up eating the basic version over rice with soy sauce (no cheese). Still a favorite, but strange to outsiders.
