A great alternative to beef or chicken tacos, these use all the same seasonings and toppings, but with chickpeas. A quick and easy vegetarian/vegan meal!
First, prepare the guacamole. Cut the avocados in half from stem to top and remove the pit. Scoop the avocado flesh out of the peel into a large bowl. Mash with a fork or potato masher, leaving some chunks. Add diced tomato, onion, lime juice, and 1/4 teaspoon salt. Stir, then salt to taste. Set aside.
In a small bowl, combine all taco seasoning ingredients, including water. The tacos come together quickly, so it’s best to have this taken care of first!
For the taco filling: In a large pan, heat olive oil over medium heat. Once shimmering, add the garlic and onion and saute until onion is soft, 3-4 minutes.
Pour in chickpeas and taco seasoning, and stir to combine. Saute, stirring occasionally, until chickpeas are heated through and some of the water is evaporated, 2-3 minutes.
Serve the filling inside of taco shells topped with guacamole, cilantro and lime wedges. Devour!
