I wanted a no-oven meal as it was well over 90 degrees and ridiculously humid. I had some leftover chicken, so I went to the store to pick up some fresh ingredients and voila! Yummy dinner, and a pretty healthy one at that. This is a perfect option for lunch on-the-go or pair it with a great salad for a light dinner.
In a medium bowl, combine the tomatoes, jalapeno, red onion, mango, cilantro, and 2 tablespoons soy sauce. Season to taste with salt and freshly cracked black pepper. Set aside.
Combine the mayonnaise and remaining soy sauce in a small bowl. Set aside.
To assemble wraps, warm tortillas in the microwave on high for 10-15 seconds. Spread a light layer of soy-mayo over the tortilla. Spread chicken down the middle of the tortilla. Top with salsa. Wrap like a burrito and enjoy!
