Chicken breasts with a delicious, flavorful balsamic sauce.
Whisk together vinegar, lemon juice, mustard, garlic, olive oil, salt and pepper. Pour into a baking dish and add chicken breasts, turning to coat. Cover with plastic wrap and marinate in the refrigerator for at least four hours and up to overnight (I usually make it before I leave for work to be ready by dinner—nine or ten hours). If you think about it (and you’re home!), flip the chicken breasts around every now and then to make sure they’re evenly marinated.
Preheat oven to 400 degrees. Bake the chicken—marinade and all—for 30 minutes. Remove chicken and pour marinade into a small saucepan. Cook over medium heat until boiling and slightly thickened (5 minutes or so).
Serve chicken with the sauce spooned over it. (It’s amazing with parmesan mashed potatoes!)

This was ridiculously good! I was so impressed with how awesome it turned out – and we only got to marinade the chicken for about 30 minutes. Definitely a keeper!
(I also used extra marinade as a sauce, but the chicken was so tender it didn’t need it)

Just made this and it was delicious! We put the chicken on the BBQ and made the marinade into the sauce while the chicken was cooking. I’ll be making this again soon!
