Description

Marinated and baked chicken topped with bacon, cheddar and sour cream.

Ingredients

  • FOR THE ASSEMBLY:
  • 2 pieces Boneless Skinless Chicken Breast
  • 1 cup KC Masterpiece Original BBQ Sauce
  • ½ cups Chicken Stock
  • 2 cloves Garlic, Minced
  • 4 strips Bacon, Chopped
  • ½ cups Sharp Cheddar Cheese, Shredded
  • Sour Cream, To Serve

  • FOR THE BRINE:
  • 6 cups Water
  • 1 Tablespoon Salt
  • 1 Tablespoon Sugar
  • 1 Tablespoon Lemon Juice

Preparation

1. Mix the brine ingredients together, making sure all the salt and sugar are dissolved. Place chicken in a bowl (preferably glass) with the brine, cover with plastic wrap and let sit in the refrigerator for 1 hour.
2. About 1/2 hour (or more) before you’re ready to cook the chicken, prepare the marinade. Mix the BBQ sauce, chicken stock and garlic with a fork or whisk. Transfer the chicken from the brine into the marinade mix. Make sure to turn the chicken over so that it’s coated. Cover the dish with plastic wrap and put in the refrigerator for 1/2 an hour.
3. Meanwhile, cook the bacon over medium heat until crispy.
4. Once your chicken has marinated, preheat the oven to 375 degrees F. Line a baking pan with foil and transfer the chicken to the pan. Bake on the middle rack for about 20-25 minutes, or until it’s done (depends on how big your chicken pieces are).
5. Remove chicken from the oven. Set the oven to Broil. Top each piece of the chicken with two strips of the bacon, and half of the cheese. Place under the broiler for 2-3 minutes and keep an eye on it—it just needs to melt the cheese.
6. Remove from the oven, top with a big dollop of sour cream, and serve.
