Description

A delicious, messy, and spicy sandwich!

Ingredients

  • 1 whole Avocado
  • 1-½ Tablespoon Freshly Squeezed Lime Juice, Divided
  • ⅛ teaspoons Salt
  • ⅛ teaspoons Pepper
  • 6 Tablespoons Light Sour Cream, Divided
  • 1 whole Chipotle Pepper In Adobo
  • 1-½ teaspoon Adobo Sauce
  • 2 whole Ciabatta Rolls
  • 1 cup Shredded Rotisserie Chicken
  • ⅓ cups Monterey Jack Cheese, Shredded
  • 1 cup Chopped Lettuce
  • 1 whole Tomato, Sliced
  • ¼ cups Pickled Jalapeno Slices

Preparation

Mash the avocado with 1/2 tablespoon lime juice, salt, and pepper to taste.

Mix three tablespoons sour cream with a chopped chipotle pepper and the adobo sauce. Separately, mix the remaining sour cream with the remaining 1 tablespoon of lime juice.

Turn the oven on to broil. Place the rolls on a baking sheet. Spread avocado onto the ciabatta rolls. Layer chicken and cheese on the roll. Put the baking sheet into the oven and broil until the cheese is melted.

Remove the sandwiches from the oven, dress with chipotle and lime sour creams, lettuce, tomato, and pickled jalapeno peppers.
