Description

Quick and easy. Chicken breasts covered in taco seasoning, cheese and salsa wrapped in aluminum and baked.

Ingredients

  • 2 pounds Boneless Skinless Chicken Breast
  • 1 package Taco Seasoning, 1 Ounce Packet
  • 1 cup Shredded Cheese (cheddar)
  • 1 jar Your Favorite Salsa, 16 Ounce Jar

Preparation

Preheat oven to 350F.

Tear off and arrange 4 sheets aluminum foil. Set one chicken breast on each sheet. (If breasts are large, butterfly them to equal 4 individual packets.)

Sprinkle liberally with taco seasoning and shredded cheese. Spoon 3 Tablespoons of salsa onto each breast and spread.

Fold over aluminum at the top and sides. Place directly on oven rack or set all 4 packets on a cookie sheet for easy removal.

Bake for 30-40 minutes depending on breast size.
Remove from the oven and serve with sour cream.

I remove the aluminum before serving so little fingers do not get burned.

I just finished dinner…this was sooo good. I didn’t have the packet of taco seasoning, but used Mojito Lime marinade mix instead…yum. I like that you didn’t need to put it in a tortilla(saved the calories). Served it with a side of Black Beans, Corn, and Brown Rice

I made these last night for dinner. They were GREAT and so easy. We just put the cooked packet contents on soft burrito-sized tortilla shells with a little sour cream and they were awesome. Definitely something I’ll make again.
