Description

A creamy sauce oozing over chicken and broccoli, then smothered with cheese? Um … yes,please!

Ingredients

  • 1-½ pound Boneless, Skinless Chicken Breasts
  • 15 ounces, weight Frozen Broccoli Florets
  • 2 cans (10.75 Oz. Can) Condensed Cream Of Chicken Soup
  • 1 cup Mayonnaise Or Miracle Whip
  • 1 teaspoon Lemon Juice
  • 2 teaspoons Curry Powder
  • 1 cup Shredded Sharp Cheddar Cheese
  • Garlic Salt, to taste

Preparation

Preheat oven to 375 degrees.

Cut raw chicken into bite-size pieces. Heat olive oil in a large skillet, and add chicken. While cooking, sprinkle garlic salt over the chicken. Continue cooking chicken until all pieces are done. Drain any excess water or oil from the pan.

While chicken is cooking, mix cream of chicken soup, mayonnaise, lemon juice and curry powder in a medium bowl.

Mix chicken and broccoli together in a large casserole dish. Pour sauce over the top and sprinkle cheddar cheese all over the top of the dish.

Cook for 35-40 minutes. Serve over rice.

Just made this tonight – loved it! I actually only had one can of cream of chicken and used a cream of celery as the second – worked great.
