Description

There are many variations of this dish. This is my spin on it.

Ingredients

  • FOR THE TZATZIKI SAUCE:
  • ½ cups Grated English Cucumber, If You Use A Regular Cucumber Seed It
  • ¼ cups Plain Greek Yogurt
  • ¼ cups Sour Cream
  • ½ teaspoons Dried Dill Weed
  • ½ teaspoons Salt (optional)
  • 1 clove Garlic (small)
  • _____
  • FOR THE CHICKEN:
  • 1 Tablespoon Olive Oil
  • 1 whole Green Bell Pepper, Seeded And Chopped Into 1 Inch Pieces
  • 3 cloves Garlic, Chopped
  • 1 whole Onion, Chopped Into 1-inch Pieces
  • 1 pound Boneless Boneless Skinless Chicken Breast Or Tenders, Cubed
  • 1 cup White Wine Or Chicken Stock
  • 3 whole Plum Tomatoes, Seeded And Chopped Into Pieces
  • 2 teaspoons Fresh Oregano, Chopped
  • ½ teaspoons Lemon Zest
  • 1 Tablespoon Lemon Juice
  • 1 teaspoon Salt
  • ½ teaspoons Pepper

  • FOR THE PITAS:
  • 4 whole Pita Breads
  • Olive Oil, To Brush On Pita Breads

Preparation

For the tzatziki sauce:
Mix the grated cucumber, yogurt, sour cream, dill, and salt in a bowl. Grate the garlic and mix well. Cover and set in refrigerator until needed.

For the chicken:
Heat olive oil over medium heat in a large skillet. Add peppers, garlic, and onion saute for 10 minutes. Remove with a slotted spoon and set aside. Add chicken and brown pieces on all sides. Deglaze pan with wine or chicken stock and reduce heat to low. Add tomatoes, oreagno, lemon zest and juice, salt and pepper. Continue to cook for another 10 minutes.

For the pitas:
Brush each side of the pita breads lightly with olive oil and lightly grill/toast on each side. Spoon a heaping spoonfull of the chicken mixture with pan juices over each pita. Then add a dollop of tzatziki on top. Serve with a fork and knife.
