Preheat oven to 425 F.
For the sauce: In a food processor combine all ingredients for avocado creme dipping sauce. Pulse to mix well, taste and adjust seasoning if needed. Set aside in fridge.
In a large bowl combine all ingredients for meatballs except for 1/4 cup of the shredded cheddar cheese. Mix well.
Line a sheet of foil on a baking sheet and spray foil with cooking spray.
Shape meat mixture into 1 inch meatballs and place on baking sheet. Sprinkle remaining 1/4 cup cheese over meatballs.
Bake for 20 minutes until cooked through.
Serve with dipping sauce.
