Description

Everything a gal could ever want in a meatball. Perfect as a main dish or an appetizer.

Ingredients

  • FOR THE MEATBALLS:
  • 1 pound Chicken Sausage, Casings Removed
  • 1 cup Whole Wheat Bread Crumbs
  • ¾ cups Sharp Cheddar Cheese, Shredded
  • 1 whole Egg
  • ½ cups Scallions, Diced
  • ½ cups Cilantro, Chopped
  • 1 teaspoon EACH: Smoked Paprika, Garlic Powder And Cumin
  • FOR THE AVOCADO CREME SAUCE:
  • 1 whole Avocado, Peeled, Pitted, And Cut Into Chunks
  • ½ cups Nonfat Greek Yogurt
  • ¼ cups Cilantro
  • 1 teaspoon Fresh Lime Juice
  • ½ teaspoons Garlic Salt
  • ½ teaspoons Cumin
  • 1 teaspoon White Wine Vinegar

Preparation

Preheat oven to 425 F.

For the sauce: In a food processor combine all ingredients for avocado creme dipping sauce. Pulse to mix well, taste and adjust seasoning if needed. Set aside in fridge.

In a large bowl combine all ingredients for meatballs except for 1/4 cup of the shredded cheddar cheese. Mix well.

Line a sheet of foil on a baking sheet and spray foil with cooking spray.

Shape meat mixture into 1 inch meatballs and place on baking sheet. Sprinkle remaining 1/4 cup cheese over meatballs.

Bake for 20 minutes until cooked through.

Serve with dipping sauce.
