These are my husband’s favorite. They are not like traditional quesadillas but they are great.
Cut the chicken in small cubes, place it in a skillet with the taco seasoning and water. Cook over medium heat until it boils then turn the heat down to low for about 7-10 minutes.
Heat the oil over medium heat in another skillet until hot. Place about 1/4 cup in a tortilla, top with cheese and fold together. Place the tortilla on one side in the oil once the oil is ready. Cook for about a minute or until the tortilla is browned and then flip it over and cook the other side. Place it on a plate lined with a paper towel to drain. Repeat with the rest of the tortillas. Top with sour cream and salsa or whatever you prefer and enjoy.
If you double this recipe you probably won’t need more oil.

Yep I call it a quesadilla but it’s different than one. They are so good.

Mmmm! Sounds like a pan fried soft taco sort of.
