Description

This is my father-in-law’s recipe. My husband could eat the whole thing by himself!

Ingredients

  • 1 pound Boneless Chicken Breast
  • 1 can (10 Oz. Size) Cream Of Chicken Soup
  • 8 ounces, weight Sour Cream
  • 2 whole Unbaked Pie Shells
  • 1 package Frozen Mixed Vegetables (1 Pound Bag)

Preparation

I gave it a cook time of 45 minutes to allow time to boil the chicken.

Boil chicken until done. When done, remove from the cooking water, cool slightly and then pull apart/shred the chicken. Mix cooked chicken and all remaining ingredients together. Put the bottom pie crust into a pie plate. Then top with the chicken/veggie mixture. Then cover with second pie shell.

Bake at 350 until shell browns, about 10 minutes.

OMG, this was so delicious! I don’t like store bought pot pie because they all contain peas and my kids have been asking for pot pie.

I also had to cook for about an hour to get the center to cook but it was sure worth it!

This was super easy and really good!

I had to bake the pot pie for an hour to get the crust to brown though.
