Description

This is my version of Chicken Parmigiana. It is so easy to make but when it bakes…the aroma makes it seem as though the recipe is complicated and extravagant. I hope you love it as much as I do!

Ingredients

  • 2 whole Chicken Breasts (skinless And Boneless)
  • ½ teaspoons Salt And Pepper
  • ½ teaspoons Oregano
  • ½ teaspoons Garlic Powder
  • 4 cups Tomato Based Sauce, Store Bought Or Homemade
  • 4 slices Your Favorite Cheese, Such As Provolone, Swiss, Etc.

Preparation

Place the 2 chicken breasts in a small baking dish. Generously salt and pepper each one. Then graciously sprinkle with oregano and the garlic powder. Fill the pan with the sauce until the chicken breasts are completely covered. Bake at 350F for about 45 minutes.

Remove the pan from the oven and cover each chicken breast with your favorite cheese. I used some leftover slices of Swiss cheese that needed to be used up. I really don’t like to waste food. Bake for another 5-10 minutes, just until the cheese is melted and gooey. Remove from the oven and let it rest for about 5 minutes or so.

Serve over pasta, with a salad and garlic bread. I prefer mine with a glass of wine.

For all of us single girls, gobble up one chicken breast for dinner, take the other to work for lunch or another evening meal later in the week. Enjoy!
