Description

This marinade is great for grilled chicken and was invented by yours truly!

Ingredients

  • 1 pound Chicken Wings
  • 2 Tablespoons Oil
  • ¼ whole Onion, Chopped
  • ¼ cups Vinegar
  • ¼ cups Brown Sugar
  • 1 Tablespoon Dijon Mustard
  • 1 teaspoon Honey
  • ½ teaspoons Chili Powder

Preparation

Heat a small saucepan over medium heat. Pour in the oil and add the onions, and let the onions cook so that the flavor sinks into the oil. Once the onions are softened, add vinegar, brown sugar, mustard, honey and chili powder and stir.

Meanwhile, cook the chicken for 5 minutes on the grill on a medium fire, then turn. Coat the top side of the chicken with sauce while the bottom side cooks; then flip and cook the other side for 5 minutes while coating the other side. From here, every 2 minutes or so, turn the chicken and add another coat, until the chicken is cooked and the sauce is used up. It’s done when the juices run clear. Remove from the grill and allow to rest for a few minutes prior to serving.

I was looking for a marinade for the mango kiwi salsa for chicken and i tried this marinade, it was absolutely delicious. I doubled the recipe and added about 1/3 cup of pineapple juice and 1/2 of the dijon mustard called for. It was sooo good with the salsa. Served it with white rice and broccoli. Thanks for the great recipe.

I used this on boneless/skinless chicken breasts and it was really good!!! Next time I hope to have time to actually marinate it for a while.

But this time I just seasoned the chicken with my own little concoction then grilled it on one side, flipped it, basted it, flipped it, basted it, and then added more and turned off the grill to let it cook in a little. GREAT!!

My grillmaster hubby loved it too!
