Description

This is a streamlined version of the Chicken Marbella recipe made famous by the Silver Palate. It is a wonderful sweet and savory dish, made healthier by using boneless skinless chicken breasts and it is downsized for a family of four.

Ingredients

  • 4 pieces Boneless, Skinless Chicken Breasts
  • 3 cloves Garlic, Minced
  • 12 whole Pitted Prunes, Chopped
  • 8 whole Large Green Olives, Sliced
  • 1 Tablespoon Capers
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Red Wine Vinegar
  • ¼ cups White Wine
  • 1 teaspoon Dried Oregano
  • ¼ teaspoons Salt
  • ¼ teaspoons Pepper
  • 2 Tablespoons Brown Sugar

Preparation

Rinse chicken breasts and pat dry with paper towels. Place each breast between two pieces of plastic wrap and pound to an even thickness.

In a resealable bag, combine garlic, prunes, olives, capers, olive oil, vinegar, wine, oregano, salt and pepper and brown sugar. Mix well, and add chicken breasts. Seal and marinate 30 minutes.

Preheat oven to 350 degrees.

Coat a baking dish with cooking spray and lay chicken in a single layer. Pour marinade over the chicken and bake for 25-30 minutes, basting with the sauce halfway through.

One of my favorites as well! I like the idea of this version. I do a similar thing but I simmer the goodies in a saucepan after marinating and I grill the chicken breasts, then pour it over them when everything is done. It’s nice to substitute half of the prunes for apricots too.
