Description

This chicken fried chicken is much healthier than the restaurant versions (no deep frying) and is made with Chex! Hope you enjoy it!

Ingredients

  • 4 whole Thin Chicken Breasts
  • 2 whole Egg Whites
  • ¾ cups Milk (or Milk Substitute)
  • 2 Tablespoons Oil
  • 4 cups Chex Cereal (corn Is Best)
  • ½ teaspoons Seasoned Salt
  • ½ teaspoons Fresh Ground Pepper
  • ⅓ cups Flour
  • ½ teaspoons Baking Powder
  • ½ teaspoons Ground Red Pepper

Preparation

Sprinkle chicken with salt and pepper.

For breading, grind Chex cereal in a blender until crushed. Mix together with seasoned salt, fresh ground pepper, flour, baking powder, and ground red pepper.

In another bowl, whisk together egg whites and milk.

Dip chicken in the breading, then the egg mixture, then the breading again. Place in a glass baking dish barely coated with oil. Bake at 350 degrees for 10-15 minutes; turn over, then bake for another 10 minutes or until done.

Wow the Chicken Fried Chicken and the Green Beans are gonna be my supper tomorrow night. They both look devine and I am always looking for new and interesting ideas for my large family. Will let you know what the family thinks but I am sure it will get 8 thumbs up.

Just out of the oven and we love it!!! I highly recommend those who make this dish to link over to “The Country Cook’s” blog and whip up the gravy which compliments the chicken! This is the best Oven Fried Chicken I’ve ever tasted!

I am so glad I tried this recipe! My husband was craving chicken fried chicken and so I found this recipe. My family absolutely loved it. In fact, they have never raved so much about any other meal I have made! My husband said it felt like we were eating at a country kitchen. Since we live in the south, that is a great compliment. The only issue I had was with the chicken breasts. They were pretty thick so they took a while to cook. I also used seasoned panko bread crumbs and seasoning salt instead. I served it with green beans and rice. It was fantastic! My husband loved the gravy also. It would be great over biscuits. Thanks for sharing!
