Description

Absolutely delicious chicken fajitas. You won’t regret making these. Plus, they are pretty healthy too.

Ingredients

  • ¾ Tablespoons Cumin
  • ¾ Tablespoons Chili Powder
  • 1-½ Tablespoon Brown Sugar
  • 1-½ Tablespoon Garlic, Minced
  • ⅓ cups Lime Juice
  • 1 Tablespoon Olive Oil
  • 1-½ Tablespoon Worcestershire Sauce
  • 1 whole Yellow Onion
  • 1 whole Green Pepper
  • 1 whole Red Pepper
  • 3 whole Boneless, Skinless Chicken Breasts
  • 8 whole Tortillas
  • Optional Toppings: Sour Cream, Salsa Or Cheese

Preparation

1. Combine cumin, chili powder, brown sugar, garlic, lime juice, olive oil and Worcestershire in a bowl.
2. Remove the stem and seeds, then slice peppers. Slice onion. Slice both into thin pieces.
3. Cut chicken breasts into thin strips.
4. Coat chicken pieces in the sauce mixture.
5. In a skillet over medium high heat, grill chicken, peppers and onions until chicken is thoroughly cooked. This will take about 12-14 minutes, rotating and flipping everything occasionally. Reapply leftover sauce mixture to the chicken once or twice while cooking. Peppers and onions should get a little softer, but still have a crunch.
6. Top tortillas with a few pieces of chicken and grilled vegetables. (And optional toppings: sour cream, salsa or cheese).

These were very yummy. I used roasted chicken instead. I just sauteed the veggies and added a little of the marinade. Then I put the cooked chicken into the marinade to coat. After the veggies had softened a bit, I added the chicken to heat up. My husband did not like the sweetness (I did). So next time I will cut back on the sugar. I also didn’t have lime juice. So I used lemon….probably only a few teaspoons though. Super easy!! I will definitely make again! :)

These fajitas are AMAZING and so easy! They even got rave reviews from my picky 8 year-old!! I also cooked my veggies separately, but used the same pan as the chicken to get some of that flavor.

This is a delicious recipe and it’s so easy too. I put together the chicken and marinade in the morning, stuck it in the fridge, and cooked it that night. I did used all the lime juice in the marinade and it was perfect. The sugar helps balance out the acidity. The only thing that I did differently was I cooked the veggies in a separate pan. My family really loves sauteed peppers and onions so I added a 2 more peppers. I added some of the pan juice from the chicken to the veggies with a little salt and pepper. I served it with halved cherry tomatoes, sour cream, salsa and guacamole. Yum! Quick and easy. Thanks for a great recipe. My family loved it and I know I’ll be making this often.
