Description

Super simple, super yummy! There are never any leftovers when I make this!

Ingredients

  • 1 box Uncooked Jumbo Pasta Shells (about 15)
  • 2 pounds Baked Chicken Breasts (4 To 6), Shredded
  • 1 can Enchilada Sauce (10 Ounces)
  • ½ cups Refried Beans
  • 1 envelope Taco Seasoning, 1 Ounce Packet
  • 1 cup Shredded Cheddar Cheese

Preparation

Preheat oven to 350°F.

Cook pasta according to package directions; drain and rinse in cold water.

In a medium bowl, add shredded chicken, enchilada sauce, refried beans, and taco seasoning. Stir together until well blended, set aside.

Fill shells with chicken mixture. Place in an 11-inch x 7-inch baking dish coated with cooking spray.

Cover and bake for 25 minutes. Uncover; sprinkle with cheese. Bake 5 minutes longer or until cheese is melted.

I finally got around to making this. It was yummy! I think next time I may try to put the enchilada sauce over the top instead of mixed into the beans.

I gave this four mitts as my husband loved it but I just thought it was so-so. Could be because I used canned refried beans which I am not crazy about. I think I would have enjoyed it much more had I had homemade refried beans, but who has time to make those?
It was very quick and easy to make, which was good for a weeknight meal.

One of my favorite recipes I’ve found on this whole website!! My husband is in love with it as well!

I made some adjustments to suit my family. I halved the recipe since it’s just my husband and I. I also didn’t use chicken because we’re vegetarian so I substituted Morningstar Ground Crumbles (1 pound). YUM YUM YUM

SO GOOD! I mixed the cheese into the filling. My husband and I loved them and my kids ate multiple helpings! Thanks!

The recipe did end up making 28 shells for me. Plenty for us to devour and have leftovers, but almost twice was much as the 15 claimed in the recipe.
