Description

A delicious and hearty chili that comes together in minutes and is low in calories!

Ingredients

  • 1 pound Boneless Skinless Chicken Breasts, Cut Into Bite Size Pieces
  • 1 whole Small Onion, Chopped
  • 1 cup Frozen Corn
  • 1 can (10 Oz. Size) Diced Tomatoes With Chilies (Rotel)
  • 1 can (10 Oz. Size) Enchilada Sauce
  • 1 can (8 Oz. Size) Tomato Sauce
  • ¼ cups Shredded Cheddar Cheese, To Serve (optional)
  • ½ cups Chili Cheese Fritos, To Serve (optional)

Preparation

In a large pan, brown chicken and onions together, until chicken is no longer pink. Add in frozen corn. Stir and cook for 2 minutes. Pour in tomatoes, enchilada sauce, and tomato sauce. Bring to boil. Cover and reduce heat. Let simmer for 15 minutes.

To serve, top with cheddar cheese and crushed Fritos.

This is such an easy and delicious dinner and everyone approved! I made it in triple it was so yummy and am making it again as I type this. Definite keeper.

This was super easy to make, and takes no time at all, compared with regular chili. The flavors go well together, and it’s not overpowering, but still mildly spicy. We’ll probably try this again with a few modifications, just for creativity’s sake! Thanks for posting!

I added a can of pinto beans as well and a bit of chili powder. It was quite delicious and will be making it again.

This was super easy, and really good. My only change would be that I would have added some black beans if I’d had any on hand. Next time I will, I’ll definitely be making this again. It was really good. Thanks for the recipe!
