Simple chicken egg rolls. My husband eats 6 of these at a time. Seriously.
Preheat oven to 400ºF. Grease up a large cookie sheet with nonstick spray and set aside.
Combine all ingredients (except egg roll wraps and oil) in a large bowl and mix together.
Place egg roll wrappers diagonally on a clean dry surface and spread about a tablespoon of the chicken mixture across each. Follow the instructions on the egg roll packaging to wrap them up tightly.
Spread the egg rolls out across the greased cookie sheet so they aren’t touching and drizzle a little olive oil on top of each. Pop them in the oven for 10-12 minutes (until golden brown).
