Description

Chicken Breasts cooked with Artichokes and an
easy, delicious sauce.

Ingredients

  • 3 whole Chicken Breasts, Skinless, Boneless Cut In Half
  • ¾ cups Salsa
  • ¼ teaspoons Cumin
  • 1 can Healthy Choice Mushroom Soup Undiluted
  • 1 can Artichokes, Drained
  • 1 can Black Olives, Sliced And Drained, You Can Use A Small Can

Preparation

Preheat oven to 350 degrees.

Spray a 9X13 glass baking pan with vegetable spray.

Place raw halved chicken breasts or tenderloins equivalent in dish. Bake 20 minutes.

While they are baking, in a small bowl, mix salsa, cumin and soup. Set aside.

After 20 minutes remove chicken from oven.

Place drained artichoke hearts around and between the chicken breasts.

Pour sauce over it all and spread evenly.

Bake for 25 minutes. Add sliced olives. Bake 5 minutes more.

Good with couscous.

I made this for my husband, and though i think it turned out exactly the way its supposed to.. it just seemed to be missing something. I dont know what though.
