Description

“Galinha no molho de amendoim”

Ingredients

  • 6 pieces Chicken Breasts
  • 3 pieces Onions
  • 4 cloves Garlic
  • 1 piece Fresh Ginger
  • 1 teaspoon Salt
  • 4 Tablespoons Vegetable Oil
  • ½ jars Chunky Peanut Butter

Preparation

Cut the chicken breasts into bite-size pieces, but not too small. Make a marinade out of the onions, garlic, grated ginger, salt and some vegetable oil and leave the chicken pieces in there for about 2 hours.

Take the chicken out of the marinade, place it in a large skillet and cook for a few minutes until light brown. Take chicken out and set aside.

Pour the marinade into the skillet and cook it for a couple of minutes. Add the peanut butter and just enough water until you have a creamy sauce texture. Salt to taste.

Add the chicken pieces you set aside, and cook it all together for another couple of minutes.

Serve with Brazilian rice and some hot sauce.

it’s about a 2/3 cup peanut butter (about 150 grams)! but i usually don’t stick strictly to that, of course you can add a little more or less, depends on how peanut-buttery you like it

How much is 1/2 jar of peanut butter? 1/2 of a small jar, medium, large? I have to make this for DH — he spent time in Brazil and loves it there.

Yum. I’m filing this one away to make soon! I love chicken recipes that don’t require breading. And anything with peanut butter has to be good!
